Three Epic Salad Dressings!!!

As promised in my last Instagram post, here are three of my very favorite salad dressing recipes.

So good, that even if you're not a salad human, you could potentially become one!


Japanese Restaurant Carrot Ginger Dressing

makes about 2 cups

1 1/2 cups shredded carrots

1/2 cup rough chopped onion or shallot

1 heaping tablespoon gluten free miso (like Mellow White)

3 tablespoons fresh chopped or jarred ginger

3 tablespoons rice or coconut vinegar

2 - 3 tablespoons of water (add if needed to blend)

2 tablespoons xylitol syrup (make with 1/2 c hot water and dissolve 1/2 c xylitol) or mirin, or raw honey

1 tablespoon toasted sesame oil

A few drops of coconut aminos or tamari

1/2 cup cold-pressed olive oil

salt & pepper to taste


Put everything in a blender or food processor until desired texture is achieved.

I like it with a little bit of texture, but you can blend it until it's super smooth!

Avocado Green Goddess

makes about 2 cups

large handful basil

large handful cilantro

1/2 cup flat Italian parsley

1/4 cup chopped chives or green onion

3-4 cloves garlic

1/2 cup plain sheep's milk or coconut milk yogurt

1/4 cup olive oil

1 small avocado, pitted and rough chopped

1 teaspoon anchovy paste or 2 small fillets (optional, sub capers for vegans!)

2 tablespoons lemon juice

salt and pepper to taste

water to blend if needed, add a little at a time


Put everything in the blender, and blend until smooth and beautifully creamy,

scrape down the sides and use the tamper if needed!

Also incredible as a dip! Try adding some marinated artichoke hearts and

sautéed spinach and onion and blend until just mixed.

Serve with corn chips or raw vegetables!

Costa Rica Inspired Passionfruit Dressing

makes about 1 cup

pulp of 3-5 passion fruits (or 1/2 cup passion fruit puree)

1/4 cup olive oil

1/4 cup grapeseed oil

3 tablespoons lime juice

2 tablespoons xylitol, agave, or honey

1 tablespoon coconut vinegar (optional)

salt and pepper to taste


Blend all until smooth.

When I found passionfruit salad dressing on a trip to Costa Rica, I was seriously disturbed that I'd lived my first 32 years without it. It literally makes any salad taste like vacation. You can order passion fruit puree online. It's a little pricey, but you can freeze it in portions, and use it for smoothies, desserts, and jams!


So there you go. Dressings that will make you crave salad as a vehicle to eat them!
